HACCP

What HACCP is, and who needs it

HACCP is a preventive approach to food safety: you identify where hazards can realistically occur, decide which points genuinely control them, and then monitor those points. It is the foundation that ISO 22000 and most retailer schemes are built on, and it works best when it stays focused rather than becoming a paperwork exercise.

The essentials

What the standard asks of you

🔎

Hazard analysis

Identify the biological, chemical and physical hazards that are genuinely significant for your process - not every hazard imaginable.

🎯

Critical control points

Establish the few points where control is essential, rather than treating every step as critical and diluting attention.

📏

Critical limits

Define measurable limits at each control point, so monitoring produces a clear pass or fail rather than a judgement call.

👁️

Monitoring and corrective action

Who checks, how often, and exactly what happens when a limit is breached - decided in advance, not improvised.

✔️

Verification

Confirming the plan still works in practice, through review, testing and audit.

📚

Foundation for ISO 22000

A sound HACCP plan is the core of ISO 22000, so the work carries straight over if you certify later.

FAQ

HACCP, answered

Straight answers on scope, timelines and what Ascenvia actually does.

What is HACCP?
Hazard Analysis and Critical Control Points - a systematic preventive approach to food safety. You identify significant hazards, determine the points where control is critical, set measurable limits, monitor them, and act when limits are breached.
Who needs HACCP?
Food manufacturers, processors, packers, caterers, cold chain and storage operators. It is widely expected by retailers, institutional buyers and exporters, and underpins most food safety schemes.
How is HACCP different from ISO 22000?
HACCP is the hazard-control method. ISO 22000 wraps that method inside a full management system with leadership, planning, competence, verification and continual improvement. HACCP is the core; ISO 22000 is the system around it.
Do we need HACCP if we have FSSAI registration?
Statutory obligations remain whatever you hold. A working HACCP plan makes demonstrating food safety control far easier, and it is frequently requested by customers independently of statutory requirements.
What usually goes wrong with HACCP plans?
Too many critical control points, limits that cannot actually be measured in practice, and monitoring records completed after the fact. A plan that is honest and focused works far better than one that is exhaustive on paper.
What does Ascenvia do for HACCP?
Hazard analysis, determining critical control points and limits, monitoring and corrective-action procedures, verification, documentation, staff training, and support through certification where you want it.
